- Chicken thighs (skinless, boneless) – 400g (about 100g per serving)
- Pumpkin, diced – 400g (about 100g per serving)
- Garlic, minced – 2 cloves
- Ginger, thinly sliced – 10g (about 2 tsp)
- Low-sodium soy sauce – 1 tbsp
- Rice wine (optional) – 1 tbsp (can omit for lower sodium)
- Salt – a pinch (optional)
- Scallions, chopped – 1 tbsp (for garnish)
Instructions:

- In a mixing bowl, combine the minced garlic, sliced ginger, low-sodium soy sauce, and rice wine (if using). Mix well to create a marinade.
- Add the chicken thighs to the marinade, coating them evenly. Let marinate for at least 15 minutes (or up to 1 hour in the fridge for more flavor).
- Arrange the diced pumpkin evenly on a heatproof plate. Place the marinated chicken thighs on top of the pumpkin.
- Steam the dish over medium-high heat for about 20–25 minutes, or until the chicken is fully cooked and tender and the pumpkin is soft.
- Garnish with chopped scallions and serve warm.
